How to Grill a Whole Salmon?
This recipe is fantastic for barbeques with lots of friends and when you want to make a good impression. Ideally, is prepared on a wood oven, or on camping. For more than six persons use a bigger salmon.
Ingredients
A whole salmon for about 3.5 pounds
Scarf without scalds and guts
Sea salt
Black pepper
Olive oil
Four big hands of mixed herbs (parsley, fennel and basil)
A newspaper
2 lemons thin sliced
6 green onions,fine cut
2 tablespoons of fennel seeds, crushed
Directions
Take a big salmon, season it inside and outside, anoint it with olive oil and full fill it with half of the quantity of herbs. Open the paper on the middle page and put the salmon inside. Sprinkle the lemon, green onion, fennel seeds and the rest of the herbs not only above the fish but also under it. Spray everything with a little bit of olive oil, fold the fish very well and tie it with a string. Wet the paper under the faucet and put the fish on the grill (220 C) for 35 minutes.
Tips
It can be served with few boiled potatoes, green salad and homemade mayonnaise.
